Any adapter/converter that produces at least 1.8A to a USB socket will work just fine. The easiest ones to find that step down from 12V will be the ones used in car lighter/accessory sockets. Do not use a pc to power the home mini as it will cut off on max volume due to not enough amps.

Ideally it needs to be a powerbank that will give you 2.1A output or you may find that the Mini will reboot when you start to turn the volume up. Constraint is how well your wifi covers your house, and whether the shroud of the connector will fit the unusually small outer part of the Mini socket.

It seems that the google home mini is powered by usb through a micro usb, if possible get a usb power adapter that can supply 5V 2A to test. I can confirm that the Google Home Mini works with a simple micro USB input, just like a smartphone. The plug is a bit recessed so not all USB cables will be compatible, but I easily found one that is.
